Our oil is a certified Extra Virgin Olive Oil, obtained by extraction with only mechanical methods at controlled temperatures below 28 degrees. All olive groves are cultivated according to the methods of biological farming.
Olives are traditionally harvested waiting for complete ripening and therefore their natural fall from the plant. Our olives are collected in plastic containers and are kept away from heat sources and crushed within 24-48 hours of collection. This ensures that the olives do not ferment and have no defects
